This course familiarizes students with the principles of Food Service Management (FSM) for commercial and non-commercial food service organizations as well as the factors that impact food service operations.
The course has a practicum component under the supervision of a practicing Food Service Supervisor/Manager. It is designed for Nutrition and Dietetics students, Hospitality and Culinary students, and students interested in learning more about the management of food service systems.
